Wilde Farm Fox Hill Vineyard Dolcetto Rosé 2018
Wilde Farm rosé is a fresh and energetic wine made from carbonic free run juice of Dolcetto from Fox Hill Vineyard. Rather than a saignée method, this is a very intentional rosé.
The 2018 Wilde Farm rosé is 100% Dolcetto and comes exclusively from The Fox Hill vineyard, located just south of the town of Ukiah on the Talmage Bench. The soils are well-drained, with high concentrations of gravel and sandstone. The vineyard is owned by Lowell Stone and tended to by Sam Bilbro. The vineyard is planted mostly to Italian varietals, including Barbera, Dolcetto, Sangiovese Grosso and Tocai Friulano, amongst others. Fig, apple and plum trees dot the grounds, as well as an acre of olive trees. The Dolcetto we source comes from the cooler, tree-shaded, north-west facing slopes.
Dolcetto grapes begin carbonically fermenting then all of the juice is run off for rosé. Neither saignée nor direct press, this rosé is a unique wine for both method and vibrancy.
Dried rose petals, orange rind and lavender aromas complete the evanescent and intriguing nose of this dark peachy colored wine. Sweet peach & pear flavors generate a softness of flavor and texture that get snapped tight when the fresh natural acidity brings more rose petal and peach skin for the win.
